Vegan chocolate orange mousse

Time to let your tastebuds loose, on this delicious vegan chocolate mousse!



These dessert pots are a great treat when you're wanting something sweet and light. Not only are they have a great tangy flavour with the smooth dark chocolate but they are completely vegan. Not only that but it uses mostly ingredients you are sure to have in your cupboard so you can be creative without going out to the shops.









The Recipe


Serves: 4-6 ramekins (depending on the size)

Prep time: 2 hr

Cook time: 10 mins


Ingredients


1 400g can of chickpeas, just the liquid (aquafaba)

1 tsp lemon juice

100g dark chocolate

1 tbsp oat milk

1 tsp sea salt

½ orange zest

Slices of orange to serve


Method


  1. First, beat the aquafaba until it forms stiff peaks, this will take around 10-15 minutes with an electric hand whisk. Add the lemon juice as it will help to speed up the process.

  2. Meanwhile , melt the chocolate in a bowl over hot water or in the microwave. If melting in the microwave make sure to stir regularly to prevent the chocolate from burning, it will take about 2 minutes. Once the chocolate is melted stir in the oat milk and sea salt and leave to cool.

  3. Once the chocolate mixture has cooled, stir it into the aquafaba along with the orange zest.

  4. Pour the mixture into your ramekins and leave to set in the fridge for at least 1 ½ hrs.

  5. Serve with orange slices and enjoy!


Alternatives


*The oat milk helps to stop the chocolate and aquafaba separating so is necessary for the recipe but you can use any alternative milk that you like or have at home in the cupboard.

*We use the lemon juice as it is the acidity that helps to speed the process, but if you have any cream of tartar in your cupboard, that also works as well.


Notes


*The orange zest gives the mousse more of a texture and so if you are looking for more of a smooth consistency we would recommend either adding the orange zest on the top or ditching the orange and stick with sea salted chocolate mousse as an alternative.

*We would really advise using an electric whisk as using a hand whisk takes an extremely long time and there is more risk of the mixture separating when you try and combine the chocolate.

*Chickpeas make a great snack when coated in paprika and roasted in the oven for 30 mins or you can use them in another recipe so as not to waste any food.
